Busy, Busy...

Wow, it has been over a month since I posted!! Time flies...;)

We have been very busy, with graduations...we had a graduation ceremony for our Christian school. Then my son's graduation party last Saturday and he graduates this evening...(we had to have his party early as he is going with his mother after graduation for the summer :(

Summer is a bittersweet time for us...Both of our ex's moved to Florida and our children have to go visit them for the WHOLE summer! UGH!! My house is WAY TOO QUIET when they are gone and we miss them terribly! One thing I am constantly reminding myself when they are gone, is "God, You love them more than I do...please watch over and protect them"

As far as GAPS, we are still on it...with a little cheating here and there ;) I was really bad last weekend...I had ordered a cake from a local bakery in town...1/2 white and 1/2 chocolate...I LOVE white cake...and I had some..not just 1 piece either! I think I had 4 over the weekend!!! and by Sunday night, ugh!!! I felt it!! Very bloated, and just plain YUCK!!!

I will have to try some recipes for a HEALTHY white/yellow cake...

My weight loss is now at 17 pounds! WooHoo!

For Memorial Day, I made Cauliflower "Potato" Salad and it was a hit!!! Very, very good!!! For the graduation party, my husband said I needed to make that and I did and it was great! I also made regular potato salad with my homemade mayonnaise. LOVE making homemade mayo..so easy!!!


We also had Boiled Peanuts. My husband was born and raised in Florida, so boiled peanuts were very common. I ordered some raw peanuts in the shell from Amazon. We boiled up our first batch and they were good, but it really messed up my stomach. So when we made them for the graduation, I soaked them for about 24 hours and then we boiled them...problem solved! The first batch I never thought of soaking them..oops!

So today is kind of a bummer day, as we will be losing two of our kids. The other two will fly out next Thursday :( But while they are gone, hubby and I enjoy our time together....but we would much rather have to fit in "date nights" amongst all the stuff that comes with 4 kiddos in the house! We are just very thankful that we have them for the most part! That was a definite answer to prayer!
