Busy, Busy...

Wow, it has been over a month since I posted!! Time flies...;)

We have been very busy, with graduations...we had a graduation ceremony for our Christian school. Then my son's graduation party last Saturday and he graduates this evening...(we had to have his party early as he is going with his mother after graduation for the summer :(

Summer is a bittersweet time for us...Both of our ex's moved to Florida and our children have to go visit them for the WHOLE summer! UGH!! My house is WAY TOO QUIET when they are gone and we miss them terribly! One thing I am constantly reminding myself when they are gone, is "God, You love them more than I do...please watch over and protect them"

As far as GAPS, we are still on it...with a little cheating here and there ;) I was really bad last weekend...I had ordered a cake from a local bakery in town...1/2 white and 1/2 chocolate...I LOVE white cake...and I had some..not just 1 piece either! I think I had 4 over the weekend!!! and by Sunday night, ugh!!! I felt it!! Very bloated, and just plain YUCK!!!

I will have to try some recipes for a HEALTHY white/yellow cake...

My weight loss is now at 17 pounds! WooHoo!

For Memorial Day, I made Cauliflower "Potato" Salad and it was a hit!!! Very, very good!!! For the graduation party, my husband said I needed to make that and I did and it was great! I also made regular potato salad with my homemade mayonnaise. LOVE making homemade mayo..so easy!!!

We also had Boiled Peanuts. My husband was born and raised in Florida, so boiled peanuts were very common. I ordered some raw peanuts in the shell from Amazon. We boiled up our first batch and they were good, but it really messed up my stomach. So when we made them for the graduation, I soaked them for about 24 hours and then we boiled them...problem solved! The first batch I never thought of soaking them..oops!

So today is kind of a bummer day, as we will be losing two of our kids. The other two will fly out next Thursday :( But while they are gone, hubby and I enjoy our time together....but we would much rather have to fit in "date nights" amongst all the stuff that comes with 4 kiddos in the house! We are just very thankful that we have them for the most part! That was a definite answer to prayer!

Thanks for stopping by!

Announcing this Month’s Giveaway — Real Food Forager

Announcing this Month’s Giveaway — Real Food Forager

I LOVE Jill's blog! I have learned so much and love watching her videos. Jill is having a GREAT giveaway this month....a Cuisinart Immersion Blender...check it out and maybe you will win!

Grass fed beef - Yes!

We found a place to purchase grass-fed beef!!! WooHoo! and the price is very reasonable!! Even better!! Right now, they are having a sale on hamburger for $2.34 a pound! A small country store, that also has a pond where we can fish! Can't wait to go fishing and bring it home to cook! (not sure how much fishing I will do, but I will be on the bank cheering my hubby on! ;) but you never know!)

When I weighed in this week I was down another 2 pounds...so that was great!

I do need to get more broth in my diet though...I have been slacking there and I feel I need to step it up. ;)

Day 60

Wow can't believe I have been on Gaps for 60 days today! I have finally taken off the 3 pounds that I gained...so I am at 10 down! Looking for more to come off...

It has been a strange month, I think my hormones are really crazy right now (with my weight and cycles), but I am going to keep doing Gaps! I am assuming the 4 miscarriages I have had the last 4 years have not helped. I feel good for the most part (except when detoxing...and then tired with headache but not bad). I know it takes a while for the gut to heal....

I just heard about a farmer where I can buy grass-fed beef locally...I need to get the details which I am hoping to do today...can NOT wait!!! WooHoo! I am excited!

Still plugging away....

Ok, I am still on Gaps, but not sure what is going on....I gained 3 pounds 2 weeks ago, on the 1st week after, weight was the same...also my monthly cycle had started...it was HORRIBLE!!! I never have cramps like I had then, it was "stay home" bad...

Then last Tuesday, weight was still the same...so I am not sure what is going on...during the week I will start to go down, then the day I need to "weigh in" my weight is back up...

I am still doing Gaps and will continue because I know it works, from others blogs and such, but it is frustrating....

I think I am also detoxing more, tonight I am very tired and have a headache...

We shall see....

An Update Finally...

Ok, last week my weight showed a 3 pound gain!! Ughh! I was not happy, but that is what this is all about, learning as I go! I also thought it may be the raw milk that I am eating with my GAPS granola...(I sure hope it is not my granola!) I started eating it with coconut milk and not eating it everyday like I was. We shall see. Also now I am back to getting to bed at a decent hour, I do think that had a lot to do with it too.

I will see what my weight is tomorrow...I don't want to focus completely on the weight loss, I do enjoy the way I am feeling, much more energy...

Sleep is very important!

This past week, my family was out of town, so I had some "projects" I wanted to get done before they come home...

The first one was ....cleaning my office..which it so desperately needed...(I have a Celebrating Home business that I had a lot of the products in my office.)

The second one was ....cleaning my closet...which also desperately needed it!

I also wanted to make Kimchi and Sauerkraut.

So by the time they got home, I had done all of the above, plus going to my niece's first birthday party, and also had a meeting on Monday night for Celebrating Home and church on Wednesday...at the expense of being up until at least midnight every night, Thursday night, I was up until 1:30 a.m.! Which for me, is definitely NOT my normal! We are usually in bed around 9.

And my weight has told the story this week, I will see what I weight tomorrow...but I haven't seen the weight loss this week.

Thanks for stopping by!

Still Here....

So, now it has been 2 weeks since I posted....hmmm...sometimes life happens!

As of last Tuesday, I have been on GAPS for 3 weeks and my weight.....

DOWN 10 pounds!!! WooHoo!!

I am loving this new way of eating...

Don't know if it is my imagination or what, but the food just tastes AMAZING!

On Sunday, I made Banana Caramel Sticky Buns from the Internal Bliss cookbook....DELICIOUS!!!

Also, made the GAPS Granola..It is FANTASTIC! (even though there is a slight taste of burnt so I can NOT wait until I make another batch) I think I am going to soak the nuts tonight....I just can't believe there are no grains in it...

My husband has been enjoying this also. One thing he said is that the indigestion and heartburn he had frequently is GONE!!! He even ate a banana the other day, and NO PROBLEMS!! These have always caused heartburn in the past!!

I am so proud of him, as he was out of town this week and has not had any Pepsi! and he is eating as healthy as he can while traveling...

He has noticed an increase in energy too!

A funny thing, he called me and had went to Subway. He had been craving a sub about 2 weeks ago, but didn't get one then and figured he would get one while out of town. He called me and said, "I have been eating good for too long" and I said "What do you mean?" He said, "I got my sub, and it didn't even taste good!!" LOL!

Still on Gaps....going strong!

Wow, it has been a week since I posted.....oops!

I am still doing the Gaps and my hubby was impressed with how I am feeling that he is eating Gaps with me! Yay!

On Tuesday, it had been 1 week on Gaps...I lost 6 lbs! WooHoo! The energy I am having is amazing...I feel great!

We have been eating the Squash Pancakes, they are yummy...when I am wanting a little sweet treat, I put some kefir cheese on it, drizzle with honey and sprinkle cinnamon...YUM!

Last night, I made the mashed "faux-tatoes" with our dinner of deer roast. They were delicious!!! For those that don't know what "faux-tatoes" are we cooked cauliflower and mashed it like potatoes with some butter! Delicious!

A few nights ago, we had spaghetti (kids had noodles) hubby and I had spaghetti squash with our sauce...loved it!

I am truly loving this way of eating and can't wait to see all the health benefits that I will get from it!

I am basically doing the Full Gaps now, so many recipes I can not wait to try!!! I will have to post them here....

Day 3 - Intro to Gaps

Day 3

Breakfast - Soft boiled eggs with butter - yummy! Beef bone broth - delicious!

Lunch - Bone broth, chicken, green beans and sauerkraut

Dinner - Farm fresh Ham, veggies (broccoli, cauliflower, carrots) with butter
I made the pancakes with almond butter, pumpkin puree and eggs...they were delicious with butter and/or little drizzle of honey. My family even liked them!

Hubby even said he is willing to try the Gaps diet after I read to him from another blog and showed him before and after photos...what a difference 1 year can make!
Kids are resisting the change, but who knows...?

Feeling full and wishing I had more sauerkraut ready...

Day 2 - Intro to Gaps

Day 2..woke with a slight headache, slept well.

Breakfast: Bone broth with raw egg yolk. Not bad! I wasn't real sure how I would like this...but it truly was not bad.

Lunch: Bone broth with veggies, meat and added in raw egg yolk.

I forgot to mention a little snack that I have had; I take kefir cheese, blend in a little honey and cinnamon.....eat it with a spoon...yummy! Full of probiotics and delicious...

Dinner: Beef roast with veggies and sauerkraut.

No headache and had energy! Yay!

Intro to Gaps - Day 1

Ok, so yesterday, March 1 was the day I decided to start my journey on Gaps!

I am going through the Intro fast because I do not have any intestinal issues and have been having kefir, kombucha, and eating whole, real food for a while.

Breakfast: I had small (1/2 c.) of smoothie. (normal smoothie at my house is kefir, spinach, beet, pulp from carrots, apple and pineapple, honey, flax seed and banana.

Cup of broth

Lunch: Chicken broth and small amount of veggies (broccoli, cauliflower, carrots)

Dinner: Chicken (cooked in crockpot), lots of veggies, homemade sauerkraut

I had a headache when I got home from work and was tired.(wasn't too bad) I ran to the store to get more cabbage to make more sauerkraut because my family likes the sauerkraut so much...needed to get more fermenting!)

After I got home, I strained my kombucha, got the next batch going, made my sauerkraut, also bought turnips to ferment.

Took an Epsom salt bath and went to bed.

Thanks for following my journey!

A New Journey...with GAPS

I am getting ready to embark on a new journey...and that is with GAPS...

Don't know what GAPS is? Gut and Psychology Syndrome by Dr. Natasha Campbell-McBride MD

So I thought I would record my journey on my blog...(that I never write on...;) Maybe this would get me writing on it...here's hoping!

I am still reading the book, so I am not exactly sure when I will start, but it will be soon!

I will keep you posted....
